Lardo di Colonnata, filmed for Eater in Tuscany
Lardo was once a poor man’s food. Today it is served in some of Europe’s best restaurants. In Colonnata, in the marble hills above Carrara, Larderia Mafalda is one of the oldest producers: a family recipe passed down for four generations, with about 22,000 kilograms of lardo cured by hand in Carrara marble every year.
Eater brought us the story. We handled field production, filming and editing, and co-directed the film with Eater’s series lead. Interviews in Italian were translated and subtitled for Eater’s audience. Published in June 2024, the film has more than 450,000 views on YouTube.
